Jews celebrate Passover because back in the day we were slaves, and now we are free.
We eat Matzo because when the Jews were escaping from slavery, they did not have time for their bread to rise. However, this tradition has always confused me. Jews are supposed to place pillows behind their backs during their Seders to provide extra comfort and remind them of their freedom. If we are going with this thinking, wouldn't we eat EXTRA bread?
We also learn from Passover that Jews hate manual labor. This explains why one of the few industries not controlled by Jews is construction. We are fine with this.
